Spicy Thai Turkey Burgers with Pickled Kimchi Veggies
Serves 4
A welcomed change from the typical burger. Lots of flavor!

For Burgers
  1. 1 pound ground turkey meat
  2. 3 large garlic cloves, very finely minced
  3. 2/3 cup finely chopped cilantro
  4. 1 small red onion, very finely minced
  5. 1 red pepper, diced
  6. 1 green pepper, diced
  7. 1 teaspoon dried chili flakes (Don't be afraid of adding more if you like spice like us!)
  8. 4 teaspoons fish sauce
  9. 1/2 teaspoon coarse sea salt
  10. 1/2 teaspoon freshly ground black pepper
For Pickled Veggies
  1. 1/4 small purple cabbage, chopped
  2. 2 medium carrots
  3. 3 cups of water
  4. 1.5 cups of vinegar
  5. 1 cup of sugar
  6. 2-3 teaspoon of salt
For Aioli Sauce
  1. 5 TBSP mayonnaise
  2. 1/2 garlic clove
  3. 1 tsp lemon juice
  4. 1 dash salt
  5. pepper to taste
For Pickled Veggies
  1. 2. Warm the water in pot,to a near boil. Add the vinegar, sugar, and salt to the water and stir.
  2. 3. Add the cabbage, carrots to a jar.
  3. 4. Add the prepared water to carrots and cabbage.
  4. 5. Let soak for at least one hour.
For Aioli
  1. Mix all ingredients together, and refrigerate for 15 minutes.
For the Burger
  1. 1. Mix ground turkey with garlic, cilantro, onion, peppers, fish sauce, salt, and pepper. Form mixture into 4 burgers, each about 3/4-inch thick.
  2. 2. Heat a grill or grill pan over medium heat. Rub each burger on both sides with a bit of oil and grill for about 8 minutes on the first side and another 5 minutes on the second, or until nicely marked and firm to the touch.
To assemble
  1. Use your favorite burger buns, and warm them slightly. Spread aioli sauce on both sides. Layers with Turkey burger, and top with drained pickled veggies.
Notes
  1. We add sliced tomatoes and lettuce to our burgers also. But feel free to adapt the recipe to include your favorite.
